Ingredients

2 cups diced Zucchini
1 can (16 oz.) whole tomatoes
¼ cup butter or margarine
1 package (6 oz.) chicken flavor stuffing mix (instant type)
1 pound ground beef
6 medium Bell Peppers, halved horizontally & seeded
boiling salted water
2 cans (8 oz. each) tomato sauce
½ cup water

Cooking Instructions

Combine the Zucchini, tomatoes, butter, & contents of the vegetable/seasoning packet in a saucepan. Bring to a full boil. Reduce the heat, cover & simmer for 5 minutes. Add the stuffing crumbs & stir just to moisten. Cover & remove from heat. Let stand for 5 minutes. Fluff with a fork.

Parboil the green peppers in boiling salted water for about 5 minutes. Brown the beef in a skillet. Mix the Zucchini tomato stuffing in with the ground beef. Spoon into the Bell Pepper shells. Combine the tomato sauce & water in a large skillet & arrange the peppers in the sauce. Cover & heat over low heat, basting several times with the sauce. Makes 6 servings.
