1 cup walnuts
4 eggs
2 cups sugar
1 cup melted butter or margarine
3½ cups flour
1½ teaspoons baking soda
1½ teaspoons salt
½ teaspoon cinnamon
¾ teaspoon baking powder
2 cups grated Zucchini, not pared
1 teaspoon vanilla
1 cup raisins, dates, or coconut (optional)
Beat the eggs.
Gradually add in the sugar then the melted butter.
Combine the dry ingredients.
Add the dry ingredients to the sugar sugar mixture alternately with the Zucchini.
Stir in the nuts & vanilla also the optional raisins, dates, or coconut is desired.
Pour into 2 buttered & lightly floured loaf pans.
Bake at 350˚F for 55 minutes or until done.
Let cool about 10 minutes, then turn out to finish cooling.
If desired frost with cream cheese frosting.
