Frosted Zucchini Chocolate Brownies: Date Added: 1 Sep 2009

Ingredients

1 cup shortening
4 squares (1 oz. each) unsweetened chocolate
2 cups sugar
4 eggs
2 teaspoons vanilla
1 cup grated Zucchini
2 cups sifted flour
2 teaspoons baking powder
1 teaspoon salt
1 cup chopped nuts

Cooking Instructions

Melt the shortening & the chocolate. Stir in the sugar, eggs, vanilla, & Zucchini. Sift together the flour, baking powder, & salt, add the dry sifted ingredients to the chocolate mixture. Stir in the nuts. Spread the batter in a 10 x 15 inch rimmed cookie sheet. Bake at 350˚F for 25-30 minutes. Cool. Frost with the Creamy Chocolate Frosting. (See the "Creamy Chocolate Frosting" recipe for directions to make the frosting.) Cut into bars. Makes about 4 dozen cake-type brownies.
