¾ cup shortening
2 cups sugar
3 eggs
2 tsp vanilla
2 cups shredded Zucchini
½ cup cocoa
2½ tsp baking powder
1½ Tsp baking soda
1 tsp salt
1 Tsp cinnamon
2 Tsp grated orange peel
½ cup milk
2½ cups flour

Cream together shortening & sugar; add eggs & vanilla & blend well. Add Zucchini & mix. Then add cocoa, baking powder, baking soda, salt, cinnamon, & orange peel, & mix well. Add & combine alternately the milk & flour. Place in a well greased angel food cake pan & bake at 350˚F for 60 minutes. Allow cake to rest in pan for about 15 minutes before removing. Drizzle glaze over cake. (See "Cake Glaze" for recipe.)
