Self Frosting Chocolate Zucchini Cake: Date Added: 1 Sep 2009

Ingredients

½ cup margarine
½ cup oil
1¾ cups sugar
2 eggs
2 cups finely grated Zucchini
1 teaspoon soda
2½ cups flour
1 teaspoon vanilla
½ cup sour milk or buttermilk
4 to 6 Tablespoons cocoa
½ teaspoon cinnamon (Omit this to bring out a better chocolate taste)
1 teaspoon salt
1 teaspoon baking powder

Topping Ingredients
¾ cup chocolate chips
¾ cup chopped nuts
¾ cup brown sugar

Cooking Instructions

Mix the oil, margarine, & sugar. Add the eggs. Sift the soda, flour, cinnamon (optional), salt, & baking powder. Add the sifted ingredients alternately with the milk to the sugar mixture. Add the vanilla & blend well. Stir in the Zucchini by hand & pour the batter into a 13 x 9 inch cake pan.

Mix the chocolate chips, chopped nuts, & brown sugar & crumble on top of the cake.

Bake at 350˚F for 40 to 45 minutes or until done. Serves 12.
