Zucchini & tomatoes with Parmesan Dumplings: Date Added: 28 Aug 2009

Ingredients

½ small onion
2 Tablespoons oil
4-5 large fresh tomatoes
salt & pepper to taste
2 basil leaves (optional)
5-6 Zucchini

Cooking Instructions

Saute the onion in oil.
Peel & cut up the tomatoes & add to the onion.
Season to taste.
Cover & simmer about 15 minutes.
If the Zucchini are young, slice them.
If they are mature, pare & cube them.
Add the Zucchini to the tomatoes & simmer until the Zucchini is transparent.
Add the Parmesan Dumplings. (See Parmesan Dumplings recipe for directions)
