1 can (29 oz.) crushed pineapple
4 cups grated, peeled & seeded Zucchini
½ cup lemon juice
1 package pectin
2 envelopes strawberry flavored drink mix, unsweetened
8 cups sugar
Combine all the ingredients except the sugar in a large sauce pan. Bring to boil & continue boiling for 10 minutes. Add the sugar & boil slowly for 10 more minutes. Pour into sterilized glass jars & seal. Makes 8 pints.
