1 cup Sugar
¼ cup Brown sugar
1 Tsp Cinnamon
¼ Tsp Nutmeg
1 T Lemon juice
¼ Tsp Allspice
1½ Tsp Cream of Tarter
3 T Corn starch
2 T Butter
Pinch of Salt
4-5 cups of pealed & sliced Zucchini in ¼ inch pieces (You can use large ones & scoop out the seeds, then the slices look more like apples.)
water to cover Zucchini in a pot
1 chopped apple (optional)
9 inch Double crust pie shell
Preheat oven at 400˚F. Cover Zucchini with water & boil for 5 minutes Drain well & mix in remaining ingredients. (If you are adding the optional apple now is the time to add it.) Bake in pie shell at 400˚F oven for 10 minutes. Reduce heat to 350˚F & cook for 20 minutes.
It should taste like apple pie.
