¼ cup dry bread crumbs
2 Tablespoons grated Parmesan cheese
2 Tablespoons flour
1 teaspoon salt
2 medium Zucchini, thinly sliced
1 egg, beaten
2-4 Tablespoons oil
In a plastic bag or shallow bowl, combine the bread crumbs, cheese, flour, & salt. Dip the Zucchini in the egg, then coat with the crumb mixture. Fry in hot oil in a frying pan until golden brown & crispy, turning occasionally. Serves 3-4.
