1 medium Zucchini
1 pound ground beef
1 can (10.75 oz.) cream of mushroom or cream of chicken soup
½ cup milk
1 cup grated cheddar cheese
Cut the Zucchini into 1 inch slices & cover the bottom of an 8 x 8 inch buttered casserole dish. Brown the ground beef. Add a layer of the ground beef over the Zucchini. Cover with a mixture of the soup thinned with the milk. Sprinkle with grated cheese. Repeat the layers until the Zucchini & ground beef are gone. Bake at 400˚F for 60 minutes. Makes 6 servings.
