4 cups coarsely grated Zucchini
⅔ cup finely chopped green onions
⅔ cup wheat germ or dried bread crumbs
⅓ cup grated Parmesan or Romano cheese
2 eggs
1 tsp salt
1 tsp dill weed
3 T oil
lemon wedges
Squeeze liquid out of Zucchini & mix well with all other ingredients except oil & lemon wedges. Heat the oil in a frying pan & drop in the Zucchini mixture by quarter cup measures. Flatten slightly with spatula. Brown over medium heat, 5 to 6 minutes on each side - or until golden brown. Serve with lemon wedges. Servers 4 to 6.
