6 cups sliced zucchini (slice about ¼ inch thick) (If using larger Zucchini, cut into fourths & then slice.)
½ cup finely chopped onion
1 cup finely grated carrots
1½ cans cream of chicken soup
1 Lb Hamburger (can use less if desired)
1¼ packages sour cream sauce mix or equivalent. (Commercial sour cream)
1 package stove-top dressing. (I use chicken flavored, but any flavor can be used.)
Very lightly salt the zucchini & steam for about 10 minutes or until barely tender. Drain.
Saute onions & carrots in a little margarine until soft. Do not brown. Combine the zucchini, carrots, & onions, set aside.
Mix sour cream sauce according to directions on the package & add to the undiluted soup.
Make stove-top dressing according to directions on package. Cook hamburger until pink disappears. Drain well.
To assemble: I use a glass dish about 14" by 8". Smaller dish can be used.
Place zucchini mixture in the bottom of dish, add hamburger, soup mixture, & then scatter dressing over the top as evenly possible. bake about 40 minutes in 350˚F oven.
Note: The original recipe did not contain hamburger. I added it for it makes a complete main dish. With the addition of the hamburger, I added the extra ½ package of sour cream & the ½ can of soup.

Follow above directions omitting the meat but using just 1 can cream of chicken soup & one package of sour cream mix.
