5½ Lbs or 22 small sized Zucchini
1 can (46 oz.) unsweetened pineapple juice
2 cups sugar
1½ cups lemon juice
3-4 teaspoons pineapple extract
a few drops of yellow food coloring (Optional, to make it look more like pineapple.)
Peel & seed Zucchini. Coarsely grate enough Zucchini to make one gallon. Mix the Zucchini with the remainder of the ingredients & bring to boil. Stir well & let it boil for 20 minutes. Let it sit for 5 minutes. Pour into sterilized glass jars & seal. makes 12 pints or 5½ quarts. Use as you would crushed pineapple.
