Arroz Tapado (Molded Rice with Meat Filling): Submitted by: Patty Shurtliff | Date Added: 3 Jun 2010 Ingredients:

2 lbs white rice
4 garlic cloves, minced
1 onion, finely chopped
1/2 tsp cumin
1 lb ground meat
6 black olives, seeded & quartered
1/2 c raisins
3 eggs, cooked, cut in 8 wedges
1/4 tsp oil
1 tsp paprika
Salt & pepper to taste
chopped parsley to taste

Cooking Instructions:

Prepare rice the usual way. Heat oil in a large skillet. Saute onion until tender, add garlic & cook for 1 minute more. Add paprika, cumin & pepper. Combine well & add meat. Cook meat, stirring frequently for 8-10 minutes or until no liquid is left. Correct seasoning. Add olives, raisins, cooked eggs & chopped parsley. Mix well. Serve individually. Lightly oil a ramekin & fill half with rice. Spoon 2-3 tablespoons meat mixture on top. Top with rice & press. Invert on dish & unmold. Sprinkle with chopped parsley on top. Can be served with French fries. Serves 6.
