Parmesan Dumplings for Zucchini & tomatoes with Parmesan Dumplings: Date Added: 28 Aug 2009 Ingredients:

1 egg, slightly beaten
pepper to taste
1 cup finely grated Parmesan cheese

Cooking Instructions:

Mix the egg & cheese until blended.
Season with pepper.
Drop by teaspoonfuls on the hot cooked Zucchini & tomato.
Simmer, covered until the dumplings are firm, about 5 minutes.
Serves 4-6.
